Spicy Turkey Chili

Recipe makes 2 servings

Ingredients:

1 lb (450g) turkey breast, cut into bite-sized pieces
2 Tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1 jalapeño pepper, finely chopped (adjust to taste)
1 red bell pepper, diced
1 green bell pepper, diced
1 can (14 oz / 400 g) diced tomatoes, no sugar added
1 cup chicken or turkey broth
1 tsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
½ tsp cayenne pepper (optional, for extra heat)
Sea salt, to taste
Freshly ground black pepper, to taste

Instructions:

Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté until soft.

Add the turkey pieces and cook until lightly browned on all sides.

Stir in the jalapeño, red and green bell peppers, and cook 3-4 minutes.

Add diced tomatoes, broth, chili powder, smoked paprika, cumin, cayenne, salt, and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 30-35 minutes, stirring occasionally, until turkey is cooked through and flavors meld.

Taste and adjust seasoning if needed. Serve immediately.
