Recipe makes 3 servings
Ingredients:
1 lb (450g) beef stew meat, cubed
2 Tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
2 cups fresh okra, trimmed and sliced
1 can (14 oz / 400 g) diced tomatoes, no sugar added
1 cup beef broth
1 tsp smoked paprika
1 tsp ground cumin
½ tsp ground coriander
½ tsp chili powder (optional)
Sea salt, to taste
Freshly ground black pepper, to taste
Instructions:
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add beef cubes and sear until browned on all sides. Remove beef and set aside.
In the same pot, sauté onion until soft, then add garlic and cook 1 minute more.
Add the seared beef back to the pot along with diced tomatoes, beef broth, smoked paprika, cumin, coriander, chili powder, salt, and pepper. Bring to a gentle boil.
Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
Add the sliced okra and cook uncovered for another 20-30 minutes, until the okra is tender and the stew thickens slightly.
Adjust seasoning if necessary. Serve immediately.
