Pumpkin Spice Protein Balls

The recipe makes 12 servings.

Ingredients:

2 scoops HLTH Code Vanilla
1 cup almond flour (3.5oz/100g)
½ cup pumpkin puree, unsweetened (about 4oz/110g)
½ cup almond butter (4.5oz/130g)
¼ cup monk fruit sweetener (1.8oz/50g)
1 tsp pumpkin pie spice
Pinch of sea salt

Instructions:

Combine the HLTH Code Vanilla with the almond flour, sweetener, pumpkin spice, and a tiny pinch of sea salt in a medium-sized mixing bowl. Whisk to unify.

Make a hole in the middle and add the pumpkin puree and almond butter. Mix well to get a thick dough.

Roll into 12 bite-sized balls and optionally refrigerate for about 30 minutes to firm up before serving.

Store in an airtight container in the fridge for up to 5-6 days.
