Pecan Cinnamon Roll Protein Bowl

The recipe makes 2 servings.

Ingredients:

2 scoops HLTH Code Vanilla
¾ cup full-fat Greek yogurt
¾ cup unsweetened almond milk
2 Tbsp mascarpone cheese
¼ cup crushed pecans
1 ½ tsp ground cinnamon
1 Tbsp sugar-free maple-flavored syrup (optional)

For the sugar-free cream cheese glaze:
2 Tbsp softened cream cheese
1 Tbsp unsweetened almond milk
¼ tsp monk fruit sweetener
1/8 tsp vanilla extract

Instructions:

In a mixing bowl, whisk together Greek yogurt, almond milk, mascarpone, and HLTH Code Vanilla until smooth and creamy. Adjust almond milk if mixture is too thick – it should be spoonable, like thick pudding.

Stir in cinnamon and maple-flavored syrup.

Transfer the mixture to serving bowls and smooth the tops. Set them aside.

Now, prepare the cream cheese glaze. In a small bowl, combine the cream cheese, almond milk, monk fruit sweetener, and vanilla extract. Mix until smooth. 

Drizzle the bowls with sugar-free cream cheese and sprinkle with crushed pecans. Optionally, dust with some more cinnamon before serving. Enjoy!
